I updated to the latest Java and was informed I need to go back to Java 6 or Java 7 to access 3270 (WERS) via Covisint through the Ford Portal. I seem to be having issues searching for Java 6 or Java 7 downloads

Oracle provides its users with the possibility to download all the releases. The releases are on an archived page. You can download almost every version of Java ever released by Oracle.

Javaws.exe is opening multiple times on windows task manager and using lots of cpu. What are issues behind uninstalling?

You should check what programs are using the Java Web Start and then install an antivirus, because it's possible your machine is heavily infected with malware. You can run AdwCleaner or Combofix. The issues behind uninstalling might be connected with software functionality. Apps that need Java Web Start won't function anymore, therefore you will have to install the package again.
